How many times have you thought about making cupcakes, but really didn’t want to make two dozen cupcakes? And what if you really don’t want to have 24 cupcakes sitting around taunting you and tempting you? I’ve got just the solution for you with this small batch cupcakes recipe that uses a partial box of cake mix.
You simply spoon out one level cup of cake mix and save the rest for the next time you want to make a small batch of cupcakes. Or better yet, measure out the cake mix and put it in labeled Mason jars along with the instructions printed on top. Then, simply pull a jar out of the pantry when you want to make a small batch of cupcakes.

Small Batch Cupcakes from a Box Cake Mix
- 1 cup cake mix
- ⅓ cup water
- 3 Tbsp vegetable oil
- 1 egg
- Heat oven to 350°F. Line 6 muffin cups with paper baking cups or use silicone baking cups.
- Spoon cake mix into 1-cup measuring cup; level top with straight edge. Place in medium bowl. Add water, oil and egg. Beat with mixer on low speed until moistened. Beat on medium speed 2 minutes.
- Divide evenly into prepared muffin cups.
- Bake 19 to 23 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. Remove from pan to wire rack to cool completely.
- Spread or pipe frosting on top of cupcakes, as desired.
My hubby and I are “almost” empty nesters and on the rare occasion (because we’re trying to eat healthier) I bake cupcakes, I don’t necessarily want to bake 24. This small batch cupcake recipe uses boxed cake mix and makes six cupcakes. More than enough for two people or any time you want a small batch of cupcakes.

I haven’t tried this small batch concept with other box mixes, like brownies, but I have tried small batch cupcakes with box cake mix and it’s worked wonderfully! My husband, on the other hand, wonders why we would ever only want to make six cupcakes. I told him that the real reason I like opening a brand new box of cake mix and putting it into Mason jars is because I’m trying to keep him from eating the cake mix! Does your husband do that? Mine does it all. the. time! Makes me feel bad. Like, if I would just bake him a cake more often, he wouldn’t have to resort to eating cake mix.
Another nice thing about these small batch cupcakes, is that you can fill a Mason jar with one cup of cake mix, affix a pretty label or instructions to the jar and gift the small batch cupcake mix! You could even put together a nice gift basket with maybe pretty cupcake papers or silicone baking cups.
