Summertime in my house means we (I) like to cook foods that are easy to prepare and don’t require I slave over the stove for hours. I mean, who wants to spend a beautiful summer evening in the kitchen? I’d rather be outdoors or spending time with my family. Summer is no time to slack off into old eating habits, either. So, I thought I’d scrounge the web and see what kind of delicious summertime avocado recipes I could find. I had already shared with you one of our all-time favorite recipes: Shrimp Stuffed Avocados, but, boy, wait until you see what I’ve found to share with you today!
I found not one but seven absolutely delicious and family friendly avocado recipes to share with you. These recipes include fresh ingredients, combined in a simple way that just says summertime yummy!
This first recipe I want to share with you is Avocado Bacon & Eggs from Lil Luna. This dish would be perfect for a Sunday brunch.
The second dish is a Cheesecake Factory copycat recipe for egg rolls. The Cheesecake Factory Avocado Egg Rolls from Chungah at Damn Delicious just make you want to stop what you’re doing right now and whip up a batch!
Okay, so the third avocado recipe I found to share with you just has simple, flavorful and yummy goodness written all over it! Try these Avocado Quesadillas from Kaitlin at The Garden Grazer.
Lenny and I love incorporating seafood in different ways in our meals. These Margarita Shrimp Taco Tarts from Cheyanne at No Spoon Necessary do exactly that! The sauce just sounds divine!
It just so happens that today I’m making Lenny some chicken salad. For a new twist, I thought I’d try this Avocado Chicken Salad from Lina at Hip 2 Save. This is a three ingredient recipe. Super simple to make. I’m gonna doctor ours up a little bit.
Here’s another great stuffed avocado recipe. This time, it’s Healthy Tuna Stuffed Avocado by Rachel at The Stay at Home Chef. I’m sure you could easily substitute chicken for the non-tuna lovers (like me) and it would be just as tasty. My Lenny happens to love tuna, so this is right up his alley!
And, of course, there had to be a desert on the list of avocado recipes. These Avocado Cupcakes from Lyuba at Will Cook for Smiles should do the trick! I’m definitely gonna have to give these a try. When I look through the list of ingredients and directions, I can’t help but think how moist and delicious these little cupcakes would taste.
Like I said, Lenny and I have been loving all the fresh ingredients we experienced while visiting Puerto Morelos, Mexico this spring and just can’t get enough! There’s just something so satisfying about fresh ingredients that come alive in your mouth.

These recipes certainly offer some ideas for incorporating avocados that I never thought about. I mean, who ever thought to put bacon and eggs in a avocado and bake it for something so flavorful and yummy? Then, let’s not forget dessert! The boys in my house have insatiable sweet tooths (teeth), but I’m sure these avocado cupcakes with the to-die-for cream cheese frosting will certainly do the trick!
