Chocolate Chip Pumpkin Pudding Cookies

I first made these cookies last October. These Chocolate Chip Pumpkin Pudding Cookies are amazingly soft and full of chocolate gooeyness! But, pumpkin spice pudding is only available in grocery stores seasonally, so be sure to stock up now!

Chocolate Chip Pumpkin Pudding Cookies

Chocolate Chip Pumpkin Pudding Cookies

Super soft, with the slightest hint of pumpkin. These cookies are sure to become a family favorite!

Ingredients

  • ¾ cup butter softened
  • ¾ cup brown sugar
  • ¼ cup sugar
  • 1 small package pumpkin spice instant pudding mix (3.4 oz)
  • 2 eggs
  • 1 tsp vanilla extract
  • 2-1/4 cups flour
  • 1 tsp baking soda
  • 1-2 cups semi-sweet chocolate chips

Instructions

  • Cream butter, brown sugar and sugar together in a large bowl or stand mixer.
  • Add in dry pumpkin spice instant pudding mix and beat until well combined.
  • Add eggs and vanilla and mix well.
  • Add flour and baking soda and beat until well combined.
  • Stir in chocolate chips until evenly mixed.
  • Roll Dough into 1″ balls. Place them on a greased baking sheet and bake at 350 degrees for 8-10 minutes.
  • Let rest on cookie sheet for a minute and then transfer to wire rack to cool.

Each oven is a little different, but I baked my cookies for about 9 minutes. I tried 8 minutes for the first batch, but they were still a little doughy after letting them sit for a few minutes. Uhm, Lenny ate them anyway and said they were really good. I’m not sure I should trust him as my recipe tester anymore. Especially after he literally gave me two thumbs up for the first batch of caramel sauce I made, which just so happened to have been burnt caramel sauce. It was definitely not good.

These cookies, however, they are soft, with just a hint of pumpkin spice, chocolate-y goodness. A definite keeper! I made these cookies last year especially for our daughter Morgan. She loves pumpkin spice everything. These cookies definitely got her approval and I’ve made numerous batches since.

    These sound wonderful! We visit my SIL and elderly MIL for Thanksgiving. My SIL does the traditional turkey dinner, but, since we stay several days, I like to take easy-to-carry-on-a-car-trip foods, too. These will be a huge hit! Thank You!

      Mary Beth, you are so welcome! If you’re looking for more of a pumpkin taste, you might want to try adding a small amount of pumpkin pie spice. Either way, these cookies are soft and taste as good as they look! Hope your family enjoys!
