This tangy cilantro lime dressing is the perfect salad dressing for your next taco salad. Add avocado or Greek yogurt to make it extra creamy!
I was looking for a new salad dressing that I could whip up quickly and that would go well with arugula when I came across this Creamy Cilantro Dressing recipe. It sounded like the perfect candidate for my chicken, apple and arugula salad.
How to Make the Cilantro Dressing Extra Creamy
For the best flavor and to make the dressing extra creamy, simply add one avocado. And blend with the remaining ingredients.
The ingredients are simply cilantro, yogurt, lemon or limes, olive oil, salt, pepper and onion powder. And, like I said, for extra creamy (and flavor) and one avocado.
The only equipment needed is a blender or food processor. And, of course, a way to cut the lemon or lime and avocado.
- 1 cup fresh cilantro, stems & leaves
- 1/3 cup plain low-fat yogurt
- 1 lemon – zest and juice
- 2 tablespoons olive oil
- 1/2 teaspoon garlic salt
- 1/2 teaspoon onion powder
- 1/4 teaspoon freshly ground black pepper
- avocado, optional
- 1/2 cup Greek yogurt, optional
- In a blender, process ingredients until smooth, adding 1-2 tablespoons of water to reach desired consistency.
- For extra creamy dressing, add one avocado, and blend well.
