Are you looking for a healthy recipe that tastes good, too? Then you’ve got to try my Crustless Quiche Recipe with broccoli, cauliflower, ham and cheese. I’m not kidding when I say I eat this dish all the time.
What I like about crustless quiche in general is that it tastes amazing, but without all the carbs typically found in crust. Besides, with ingredients like broccoli, ham, cauliflower and cheese, you won’t even miss the crust.

Crustless Quiche Recipe Ideas
My favorite way to eat crustless quiche is with broccoli, cauliflower, chopped ham and, of course, shredded cheddar cheese. But, you don’t have to limit your crustless quiche to just those ingredients! Here are a few of my other favorite combinations:
- tomatoes and zucchini
- bell peppers, onions and tomatoes
- chicken and bell peppers
- sausage and onion
- spinach and mushrooms
- onion, bell peppers, mushrooms, ham and cheddar cheese
- bacon, cayenne, nutmeg and swiss cheese
Really, the possibilities for crustless quiche are endless!
Kitchen Essentials for Making Crustless Quiche
Before you begin to make crustless quiche, you should gather up a few supplies. I’ve provided links to products I recommend.
Crustless Quiche with Broccoli, Cauliflower, Ham and Cheddar Cheese
The basic recipe includes 8 large eggs, 1 cup heavy cream and 8 oz shredded cheese. You then include 2 cups of your favorite vegetables and/or meats to include in your quiche.
1. Saute the veggies
You start off by sauteing the vegetables and ham in a skillet over medium heat. I usually add maybe a tablespoon of olive oil or coconut oil to the skillet, just to keep the veggies from sticking.
This also helps remove some of the extra moisture and brings out the flavor in the ham. Yum!

2. Blend the eggs
Add the eggs, cream, salt and pepper and blend until well combined. You can also simply break the eggs into a bowl and whisk the eggs and cream by hand. I like the blender method.

3. Combine the ingredients
With the oil of your choice (I like olive oil), lightly oil the inside of your glass baking dish.

Add the sauteed vegetables and ham to the baking dish. Sprinkle on some salt and pepper.

Cover veggie mixture with half the shredded cheese.

Pour egg mixture over top of the veggies. Add additional salt and pepper.

Top with remaining shredded cheese.

4. Bake for 40 minutes
Bake the quiche in a 350 degree pre-heated oven for about 40 minutes or until the egg is firm (no longer jiggly in the middle).

The top will be this lovely golden brown and the cheese will be slightly crispy. Perfection!

Like I said, you can substitute the broccoli, cauliflower and ham for the vegetables and meat of your choosing. The combinations are endless. Your taste buds and your waste will thank you!

Crustless Quiche with Broccoli, Cauliflower, Ham & Cheese

Ingredients
- 8 large eggs
- 1 cup heavy whipping cream or whole milk
- 1 tsp salt
- 1/2 tsp pepper
- 1 tbsp olive oil
- 1 cup broccoli frozen
- 1 cup cauliflower frozen
- 1 cup ham diced
- 2 cups cheddar cheese shredded
Instructions
- Preheat oven to 350 degrees.
- In a skillet over medium heat, add the broccoli, cauliflower and diced ham. Cook for 4-5 minutes, just to remove some of the water from the vegetables and bring out the flavor of the ham. Cook just until vegetables are tender.
- In a blender, combine the eggs, cream, salt and pepper and blend until well blended.
- Lightly oil the bottom of a 13×9 pan. Pour vegetables and ham into dish. Sprinkle with salt and pepper and 1 cup of shredded cheddar cheese. Pour egg mixture over top of vegetables and sprinkle with remaining shredded cheese
- Bake at 350 for 35-40 minutes or until center is set. Remove from the oven and let sit for about 5 minutes before cutting.
Notes
Allow quiche to cool at room temperature at least 20 minutes before transferring to freezer containers.
