Strawberry Vinaigrette – The Perfect Spinach Salad Dressing Recipe

Strawberry Vinaigrette Dressing just might be the best dressing for spinach salads!

This weekend was absolutely beautiful here in Grove City, Ohio. I even got to be outside a little bit yesterday and mow the lawn. Beautiful day! All that sunshine made me hungry for something fresh and fruity. My solution, Strawberry Spinach Salad with my homemade recipe for Strawberry Vinaigrette Dressing. Perfect!

Strawberry Vinaigrette Dressing by The Birch Cottage

This salad and dressing combo have become my favorite. I love this salad and just can’t get enough of it!

Typically, I just make the salad with fresh baby spinach, strawberry slices and slivered almonds. However, you can use whatever toppings you like, such as walnuts, oranges, chicken, shrimp – the possibilities are endless.

What really makes this salad is the dressing. This flavorful, delicious, robust Strawberry Vinaigrette recipe just blends all the flavors together into a little masterpiece of taste!

Strawberry Vinaigrette Salad Dressing Recipe

Strawberry Vinaigrette Recipe

This strawberry salad dressing is the perfect topping for spinach salad
Ingredients
  • 2/3 cup strawberries
  • 1/2 shallot, chopped
  • 1/4 cup balsamic vinegar
  • 1/4 cup water
  • 2 teaspoons fresh thyme
  • 1/4 teaspoon ground pepper
  • 1-1/4 teaspoon dijon mustard
Instructions
  1. Place all ingredients in a blender or food processor and process until smooth, about 30-45 seconds.

Seriously, if you like spinach salad, you’ve just got to give this Strawberry Vinaigrette a try. The sweetness of the strawberries with the tartness of the balsamic vinegar and dijon mustard are the perfect marriage of flavors.

The salad dressing will keep in the refrigerator for probably a week. You may notice some separation, which is normal. Just give it a good shake or stir before serving.

One of the best things I like about homemade salad dressings are the lack of preservatives. They just don’t get much healthier or tastier than this strawberry vinaigrette.
