Low Carb/Keto Flax Muffins with Walnuts
Full of fiber goodness from the falx, these soft muffins have the perfect texture and flavor. Whether you eat low carb or not, you'll love all the nutrition packed in such a flavorful muffin.

Preheat oven to 325F. Line muffin pan with cupcake liners.
Measure flax meal into a large bowl. Add lightly beaten eggs and stir to combine.
Add oil to the flax mixture and stir to incorporate.
Add sweetener (Swerve granular) to the flax mixture, stirring to incorporate.
Add coconut flour to the flax mixture and stir to combine.
Add vanilla extract, cinnamon, lemon juice, baking soda and salt. Mix by hand until well combined.
Fold in walnuts (optional).
Spoon into lined muffin pan and bake for 18 to 22 minutes.
